Fennel and Citrus Salad
We love fennel raw or cooked. We often use small bulbs, sliced thinly, into our green salads.
This recipe came from a Greek cookbook from my sister's boyfriend.
We've often made a similar thing using fennel in our citrus and spinach salad.
3 large fennel blubs, cleaned and sliced (save fronds and slice them too - yum)
4 oranges or two grapefruit or any combination
1/4 cup olive oil (use the good stuff)
Salt and pepper to taste
Peel oranges, slice fennel, add olive oil and salt and pepper to taste.
Serve over salad greens if desired.
