Leek and Goat Cheese Tart

This recipe came from Southern Living via my Aunt Ginger. She notes that the tarragon is essential. This recipe is very straight-forward, very delicious and it travels very well.

one pie crust
4-5 medium leeks
2T Olive Oil
3T heavy cream
1/2tsp salt
1/4 tsp white pepper
3/4 cup crumbled goat cheese
2T fresh tarragon
Bake crust at 425 degrees for 8-10 minutes or until lightly browned.
In the meantime, clean and chop leeks.
Saute leeks in olive oil 8-10 minutes or until tender. Stir in cream, tarragon, salt and pepper and cook 4-5 minutes or until thickened.
Sprinkle 1/2 cup of goat cheese on to crust, top with leek mixture and sprinkle with the remaining cheese.
Bake at 375 for 18-20 minutes, until golden and bubbly.
